Easy Fish Curry In Coconut Milk / Fiji Style Indian Fish Curry

Ingredients:
1 kg fish fillets ( or fish pieces of your choice)
1 teaspoon salt ( for seasoning fish fillets )
1 cup plain flour
oil for cooking
3 tablespoons of curry powder
1 medium onion chopped
1 can coconut milk ( or coconut cream)
Salt to taste
1/2 can diced tomato (crushed tomatoes)
1/2 teaspoon cumin seeds
1/2 teaspoon mustard seeds
2 tablespoons crushed garlic & ginger
1 small chilli chopped
1 teaspoon tumeric
2 sprigs of curry leaves
2 cups of hot water
1 tablespoon lemon juice
Coriander leaves for garnishing


Method:
1. Take your salt, sprinkle it over the fish fillets and mix it well.
2. Take one fish fillet at a time and lightly coat it with the flour and put it on a plate.
3. Repeat this process till you have finished coating up all the fish fillets.
4. To cook the fish fillets, put a non-stick fry pan on medium heat and heat some oil.
5. When the oil gets hot, add 3 fish fillets at a time and cook it for 2 minutes on each side. Take it out on a plate and repeat this process with the remaining fish fillets.
6. To make the fish curry , take a pan and put it on medium heat and heat about 2 tablespoons of oil.
7. When the oil gets hot , add cumin and mustard seeds and fry it for 30 seconds.
8. Add chopped onions, curry leaves , crushed garlic , ginger and chopped chilli and cook it for 2 - 3 minutes or until the onions get a light golden brown colour.
9. Add tumeric, curry powder and diced tomatoes, give it a mix and cook it for 1 minute.
10. Now add coconut milk, hot water and 1 teaspoon of salt. Give it a good mix and bring it to a boil.
11. When it starts to boil, put a lid on and simmer it for 10 minutes.
12. After 10 minutes, add fish fillets and cook it for 5 minutes.
13. Taste your salt , add lemon juice , give it a quick mix and cook it for 1 minute.
14. Turn the heat off and garnish it with coriander leaves.
15. Enjoy it with rice or rotis.

Tips:
• Left over curry can be kept in the fridge for up to five days.
